Under the direction of Executive Chef Victor Rosado, the restaurants Perla and Ocean Terrace introduce highly distinctive dining experiences, driven by a keen sense of hospitality, bespoke service and globally inspired flavours.

Perla: the brilliance of a confidential supper club

Perla immediately stands out as the confidential establishment of this new season. Inspired by the rarity and beauty of the pearl, this sophisticated “supper club” offers an exclusive experience blending fine dining, seafood, premium cuts of meat, fine wines and tableside service choreography. Designed as an intimate sanctuary with an elegant design, this cozy lounge opens its doors on 19 October 2026.
The spirit of “sobremesa” is celebrated here, inviting guests to prolong the evening around lively conversations. The experience is enhanced by a distinct sense of showmanship, notably with a champagne, martini and caviar trolley, as well as a caviar service orchestrated directly by the chef. Signature menu items include prepared oysters, yellowtail (Hamachi) elevated with a guanábana ponzu, Patagonian toothfish, Prime New York Strip steak, as well as majestic sharing cuts like the Tomahawk steak or whole Dover sole.
Ocean Terrace: Mediterranean sweetness facing the Atlantic

A change of scenery awaits at Ocean Terrace, a coastal dining destination that lives to the rhythm of the Atlantic. Ideally located by the pool and facing the shoreline, the establishment embraces the vibrant spirit of the Mediterranean coast. Expected to open in early November 2026, this restaurant offers a journey from sunrise to sunset, from breakfast to dinner.
The menu features sun-drenched classics: artisanal pizzas, fresh homemade pasta, local fish, colourful salads and sharing starters inspired by Europe’s most beautiful seaside destinations. Guests can enjoy grilled octopus, shrimp salad, a classic Margherita pizza, lemon mussels or a half roast chicken Italian-style with adobo. Regular brunches and seasonal programming will bring life to this panoramic terrace.
